Apple picking – what to do with LOTS of apples

Lots of fun to be had apple picking this week-end, even if it means a + 50 min drive up to Wisconsin to Apple Holler .  Apple Holler is a pretty fun amusement park of a farm with the ever so memorable pig races!   The girls dove right into the orchards and started picking and picking and picking and then eating the apples and more apples.


Now the only problem is what to do with ALL THESE APPLES.  So firs attempt to deplete the apple stock, apple cake.  Quick google search yielded Marie-Hélène’s Apple Cake.  Looks simple enough though i ended up making some simple modifications by removing the rum and added some cinnamon and upped the batter ratio

140g all-purpose flour
1.25 teaspoon baking powder
Pinch of salt
5 large apples (if you can, choose 4 different kinds) cubed
3 large eggs
225g sugar
1 teaspoon pure vanilla extract
1 teaspoon of cinamon
12 tablespoons unsalted butter, melted and cooled

Also i added an extra step i tossed the apples with sugar and cinnamon to make sure they have lots of flavor.


This cake is delicious warm!
